We fine our wines with eggwhite (reds) and skimmed milk (whites and pink). This means unirrigated vineyards are pruned and suckered to produce small yields of grapes with concentrated flavours at a low pH. Our wines are unaggressive even when young, but develop well with cellaring. Currently we make a blend of white called GALAXY (Chenin Blanc/ Chardonnay/ Viognier), a red blend named JACK’S RED (Pinotage/Shiraz/ Cabernet Sauvignon/Mourvèdre), SANGIOVESE, and a dry rosé called COSMOS. Occasionally we will release a CHENIN BLANC.
